An often forgotten fact is that many of our favorites actually start from a plant. Chocolate is made from seeds that come from the cocoa tree. Cocoa is pronounced (kah KOW). Farmers grow the cacoa and then harvest, ferment, and dry it out. It is usually dried in an open-air environment. The cocoa is traded along with other commodities such as sugar, and coffee on a common exchange called the cocoa, sugar, and coffee exchange. The chocolate manufacturing companies buy the seeds and then crush them up into a mixture that can be rolled and molded.

Converting the seeds is an important step, which is followed by sorting and cleaning. The seeds are sorted according to type and the country they came from. They are then weighed and blended according to the manufacture specifications. Sometime twelve different types of seeds can be used to make one chocolate blend. Further processing includes steps that require special machines in factories. The future candy is ground into nibs and eventually a paste. Further refining is done and eventually the candy is molded and wrapped.

Companies will buy the chocolate and further process it in their own factories to make candy bars.  Candy names such as classic Hershey Bars. At the Hershey Company they mold the chocolate into a bar or a candy kiss. They may add crunchy items, almonds or peanuts depending on the brands.
